Planned botanical profile
Sorrel and ginger lead the proposed profile, with pimento as a possible warming accent. The direction is bright and tart-edged at first, opening into a deeper ginger finish; sweetness and spice levels are still being developed.
The botanical cabinet
Deep red against violet light, floral character against ginger fire. Sorrel with ginger and spice has a well-established place in Jamaican drinks, and that meeting of colour and warmth is the inspiration here.
